This mini oreo mocha "parfait" is just the "perfect" combination of oreo and coffee.
If you’re looking for a delicious, no-bake and fuss free dessert that only takes about 30 minutes to put together, look no further! These mini oreo mocha parfait are made with crushed Oreos, homemade coffee chocolate ganache and is topped with some whipped cream!
-For Coffee Chocolate Ganache:
140g dark chocolate
60ml strong espresso made with Country Bean Caramel Coffee
-For the Cream:
1/2cup icing sugar
-For the cookie layer:
10-15 crushed Oreo
For Coffee Chocolate Ganache:
-Put the cream and chocolate in a heat proof bowl, and microwave it in 15 seconds interval. Keep whisking in between intervals until smooth.
-Add the coffee and set it aside
For the Cream:
-Beat the cream with the sugar until it forms soft peaks.
-Add 1/4 cup of this to the the chocolate ganache.
-Keep both the bowls in the fridge to set for an hour.
For layering the parfait:
-Add a scoop of the ganache and then a layer of whipped cream.
-Top with crushed Oreo and repeat the process again.
-Decorate it with berries and mint leaves.
