The out of the world Coffee Streusel muffin recipe

If you love your morning coffee, you’re sure to love this muffin too.

Don’t worry if you’re new to baking! This is the easiest and quickest muffin recipe ever. You require only a few basic ingredients and NO MACHINE is needed.

To take these muffins up a notch up, we decided to add some Streusel and a glaze too! (If you’re in a hurry you could skip this step)


For the Coffee Muffin -

113g unsalted butter

200g caster sugar

3 large eggs

60ml milk

1 tbsp Country Bean hazelnut coffee

230g sour cream or hung curd

8ml vanilla extract

312g refined flour

8g baking powder

3g baking soda

Pinch of salt

For the Streusel -

125g refined flour

148.5g brown sugar

4g cinnamon powder

1g fresh grated nutmeg

Pinch of salt

84g unsalted butter

For the Glaze -

1 cup icing sugar

4 tbsp water

Vanilla extract (optional)


For the Muffin -

  • In a big bowl, cream the butter and sugar together.                                                    
  • Add the eggs one at time a time, beating it in between.                                               
  • Add the hung curd and mix well.                                                                               
  • Now mix the milk and coffee powder in a small bowl and then add it to the big bowl.      
  • Finally fold in your dry ingredients along with the vanilla extract. Make sure your batter is well combined.                                                                                                     
  • Evenly distribute the batter into your muffin tin.                                                          
  • (If you're only baking the muffins, bake it at 180 C for 20 mins or until a skewer inserted comes out clean)

For the Streusel -

  • Add all the ingredients in a big bowl.                                                                          
  • Carefully mix the ingredients with your hand to form a crumbly texture.                         
  • Add this mixture on top of the muffin batter and bake in a 180 C pre heated oven for 20 minutes.

For the Glaze -

  • Simply combine all the ingredients in a bowl and mix until a smooth and glossy texture has been formed.                                                                                                       
  • Lather this over your freshly baked muffins and enjoy!
These coffee muffins are the perfect breakfast treat. Best enjoyed with a cup of coffee and a few friends :)
